How to Make Besan Laddu at Home on Diwali

Ingredients you will need:

  • 2 cups besan (gram flour)
  • Desi Ghee
  • 1 cup powdered sugar
  • 4-5 green cardamoms (powdered)
  • 2 tablespoon raisins

Method to make besan Laddoo

  • Road the besan properly in a kadahi or pan on low flame for about 10-12 minutes.
  • Add the melted ghee and continue roasting the besan for more 5-6 minutes.
  • Stir continuously while roasting to ensure besan is not burned.
  • Switch of the fire once you get strong nutty fragrance from the besan.
  • Remove the pan/kadahi from the stove.
  • Add powdered sugar and mix well so that no lumps are formed.
  • Add powdered cardamoms and raisins and mix well.
  • You can also use chopped dryfruits for enhanced taste of laddu.
  • Let the entire mixture cool down to room temperature.
  • Make small or medium size besan Laddoos.
  • Store the Laddoos in air tighter container.

How to Make Mathri at Home on Diwali

Ingredients you will need:

  • 1 Cup Atta (wheat flour)
  • 1 Cup Maida (or all-purpose flour)
  • 1 Teaspoon Carom Seeds (ajwain)
  • 1 Teaspoon Crushed Black Pepper (Kali Mirch)
  • 1 Teaspoon Cumin Seeds
  • 1/4 Teaspoon Baking Soda
  • 2 Tablespoon Ghee
  • 1/2 to 3/4 Cup Water
  • Salt to Taste
  • Oil for Deep Frying

Method to make Mathri

  • Take maida, atta, baking soda, and salt together in a big bowl.
  • Add the carom seeds (ajwain), and mix well. And then add ghee.
  • Add water and make the little tight and hard dough.
  • Make the mathris in any shape you want.
  • Deep fry the mathris in low to medium hot oil.
  • Serve mathris as Diwali snacks with pickles.

How to Prepare Khasta Kachori on Diwali

Ingredients you will need:

For Dough: 2 cups all-purpose flour (plain flour or maida), 4 tablespoon oil or ghee, water, and 1 pinch salt

For filling: 1 cup moong dal (soaked overnight), 1 teaspoon coarsely grinded fennel seeds, 1 teaspoon coarsely grinded coriander seeds, 1 teaspoon red chili powder, 1 pinch Asafetida, half teaspoon dry mango power (amchoor), salt to taste, and oil for deep fry.

Method you need to follow:

  • Take all purpose in a big plate, add oil and salt and knead with the help of chilled water (chilled water will provide crispiness to Kachori).
  • Now set aside the dough and let it rest for 15 minutes
  • Wash the soaked moon dal and grind it removing all excess water.
  • Now 1 teaspoon oil in a frying pan, add asafetida, fennel powder, dhania powder and red chili powder.
  • Add dal to it and mix well adding salt and dry mango powder.
  • Now make small balls of the kneaded dough.
  • Fill each ball with one teaspoon of the dal mix and make small and round puri with little pressure.
  • Now heat lots of oil in a kadahi in high flame put the kachoris in it and lower the flame.
  • Fry till it turns golden brown from both the ends.
  • You can serve it with potato gravy or with chutney as well.
  • You can store it at a maximum of seven days.

How to Make Kalakand at Home on Diwali

Ingredients you will need:

  • 100 gram powdered sugar
  • 1 tea spoon cardamom power
  • 250 gram milk cream
  • 200 gram skim milk power
  • 200 gram paneer
  • 2 teaspoon finely chopped pistachios
  • A few strands of saffron

Method to make Kalakand

  • Take milk power and cream in a big bowl and mix well.
  • Heat the combined ingredients in Kadahi on low flame for 2 minutes. Stir well.
  • Add sugar and mix well continue for next 6-7 minutes.
  • Switch of the stove and keep the mixture aside to let it cool down.
  • Add saffron, paneer and cardamom. Mix well.
  • Add more cream if the mixture it too thick.
  • Dress and top up with finely chopped pistachios.

How to Make Malpua on Diwali

Required ingredients:

  • 1/2 kg all-purpose flour or maida
  • 1/2 liter milk
  • 750 gram sugar
  • 1 cup grated coconut
  • 250 gram dryfruits
  • 6 pcs bananas
  • 5-6 pcs green cardamoms
  • 1 liter oil or ghee for frying

Method to make Malpua

  • Boil the milk in a pan until it get becomes thick.
  • Place aside and allow it to go at room temperature.
  • Add maida, dry fruits, sugar, coconut, cardamom powder in the milk.
  • Still well the mixture until it gets a fine paste.
  • Add banana paste to the mixture and mix well.
  • Heat the pan and add ghee or oil.
  • Make sound-shaped Malpua using the paste and fry till it gets red.
